Crescent Cheeseburger Pie


I've made a couple versions of Cheeseburger Pie this year.   I pulled ground beef out yesterday, but a quick check of my freezer showed the pie crust I thought I had was gone.   I had a tube of crescent rolls in the fridge, so I went with those.  


This comes together really quickly.  Brown the ground beef with some minced onion, season to taste, add in ketchup, mustard and cheese.  Pour it into a pie plate, top it with some more cheese (you can never have enough cheese!).  Pop the crescent rolls on top, sprinkle it with sesame seeds and bake.

My son who is super picky devours this, and it's hearty enough to satisfy my husband after a long day at work.  I top mine with some shredded lettuce and tomatoes.

Ingredients:

  • Non stick spray
  • 1 lb ground beef (I use 85%)
  • 1/2 cup diced onion
  • Salt and pepper- to taste (I use about 1/2t salt and 1t pepper)
  • 1/4 c ketchup
  • 2 t mustard
  • 1 c shredded cheddar cheese, divided
  • 1 tube crescent rolls
  • Sesame seeds

Instructions:

  1. Heat oven to 375
  2. Brown ground beef with onion, until no longer pink, then drain. Add salt, pepper (to taste), ketchup, mustard and 1/2c shredded cheddar cheese and give it a stir.
  3. Spray pie plate with nonstick spray. Pour in beef mixture, and top it with another 1/2c shredded cheddar.
  4. Separate the crescents and lay them around the pie plate, making sure the whole surface is covered.
  5. Roll the edge over and crimp with fingers to make a crust. Sprinkle with sesame seeds.
  6. Bake for 10 minutes, or according to the crescent package directions.
Notes: Can substitute minced dried onion for the fresh.

I'm a huge fan of the Dunkin Donuts Power Breakfast sandwich, so when I started seeing ads for the new Egg White & Veggie Omelet Bites I stopped in and gave them a try.  They were delicious, but of course, I knew I could make them at home.  I started with the whites of six eggs. Copycat Dunkin Donuts Bacon and Cheddar Omelet Bites

Since I already came up with a version of Dunkin Donuts new Egg White & Veggie Omelet Bites for myself, I decided to make the other variety that they are offering, Bacon & Cheddar, for my husband. Super simple.  Beat up some eggs with salt and pepper.  Add in some shredded cheddar and a slice of bacon cut into 1/4" pieces (I used kitchen shears).  Bake them for about 9 minutes in sprayed mini donut pans. They baked up light and fluffy.  The bacon stayed crisp and there's just the perfect amount of cheese.   I split them up into portions in zip top bags and that way we can just grab a bag and warm them up. My husband laughed when I told him 3 is the serving size.  I'll definitely be doubling the recipe next time!
