Chicken and Bacon BBQ3000 Poppers

I may just beat this cooking slump yet!   I cut this one out of the catalog as soon as it arrived, and finally got to try it last night.   We eat lots of chicken, and it can be a challenge finding new ways to serve it up   :)

This was a bit "fiddly", but once you get a rhythm down it goes fast.   I used chicken breast tenderloins and cut them in 3 pieces.    I laid foil on the bottom of my sheet pan for easier clean up, then added the rack over it.    Mine were done in about 30 mins, and then I just ran the broiler for a minute or two to crisp the top.

It would make great apps for a party, and Tim has asked if I could just wrap the boneless breasts and make it as a dinner portion.  Worth a try!  He also wondered if there was some way to work cheese into the equation, obviously not a man worried about his weight  :)

BBQ3000 is a Penzey's blend, I got it as a free sample and have been reordering it ever since.   It has salt, paprika, black pepper, nutmeg, mustard, allspice, citric acid, garlic powder, ginger, sage, thyme, white pepper, cinnamon, and natural smoke flavor.  

Chicken and Bacon BBQ3000 Poppers

4 boneless, skinless chicken breasts
1 lb. sliced bacon
2 TB. BBQ 3000
1/2 Cup firmly packed brown sugar

Preheat oven to 350°. Spray a flat roasting rack with non-stick cooking spray, place on a foil-covered roasting or broiling pan and set aside. Cut the chicken breasts into 1-inch cubes. Cut each bacon slice into thirds. It is easiest to do this before you separate the bacon into slices. Wrap a piece of bacon around each chicken cube and secure with a wooden toothpick. Combine the BBQ 3000 with the brown sugar. Drop each meat skewer into the mixture and toss gently with your fingers until completely coated. Arrange the poppers on the rack and bake at 350° for 30-35 minutes, until the bacon is crisp and the topping browned.
