Chocolate Waffles

Right before Christmas I got a Presto Flipside waffle maker, and it's been patiently waiting to be tested   lol.    Hand has finally healed enough that I've got nothing splinted but the pinky, so I was ready to test it out today!     Very pleased with both the iron and this fantastic Gale Gand recipe that was shared by Cyndy  :)   The waffles aren't overly sweet, which I liked because Jake likes his topped with ice cream, whipped cream and cherries.  I also drizzled mine with the cherry juice and a little chocolate syrup.   YUM!



Chocolate Waffles
Adapted from:  Gale Gand's  BRUNCH!

2 large egg yolk
1 1/2 cups cold milk
2 tsp baking powder
1 1/4 cups A/P flour
1/4 cup unsweetened cocoa powder (I used Penzey's- JM)
4 tbsp unsalted butter, melted (I used salted- JM)
2 large egg whites
2 tbsp light brown sugar

Heat a waffle iron.
In a medium bowl, combine the egg yolks, milk, baking powder, flour, cocoa powder, and melted butter and mix until almost smooth. In the bowl of a mixer fitted with the whisk attachment, whip the egg whites until stiff peaks form; then add the brown sugar and continue whipping until stiff. fold the whipped egg whites into the batter.
for each waffle, pour 1/2 to 1 cup of the batter(or amount recommended by the waffle iron maker) onto the waffle iron; bake as directed by the manufacturer. (mine took exactly one cup per waffle and made 4 nice thick ones- JM)
