Cinnamon Bun Pancakes

Tim & I love cinnamon.  So does Jake.   One of his favorite yogurts right now is the Cinnamon Roll from Yoplait.   When I saw this recipe on PW I snagged it up, thinking it would be great to make for dinner and then Tim could reheat and eat when he gets home at 1am.   

The recipe goes together easy, smells delicious when it's cooking.   The maple-powdered sugar glaze is amazing.      I used my All Clad griddle lightly swiped with butter and produced a mountain of delicious CD sized pancakes.     

Sadly this will not be a repeater at our house though.   5 bites in Jake started breaking out in hives...     He does have an egg sensitivity and so does Tim, and I'm guessing the ratio of egg to other ingredients is just too high in this one for him.    Sigh.    Give them a try though.    They are fantastic.

                          Cinnamon Bun Pancakes

  Amount  Measure       Ingredient -- Preparation Method
--------  ------------  --------------------------------
  1 1/2            cup  All-purpose Flour
  3        Tablespoons  White Sugar
     1/2      teaspoon  Salt
  4          teaspoons  Baking Powder
  1         Tablespoon  Cinnamon
  2              whole  Eggs Beaten
  1                cup  Milk
  2        Tablespoons  Corn Syrup
     1/4          cups  Butter -- Melted
  1         Tablespoon  Vanilla
In medium bowl, combine flour, sugar, salt, baking powder and cinnamon with a whisk. Whisk well to make sure everything is combined.
In separate large bowl, beat together eggs, milk, corn syurp, butter and vanilla. Stir in flour mixture.
Heat a lightly oiled griddle or frying pan over medium/low heat. Pour about 1/4 cup batter onto griddle. Brown on both sides.
Serve warm with icing drizzled over the top.

Maple-Butter Icing (for Pancakes)
1 cup Powdered Sugar
¼ cups Butter, Melted
Dash Of Salt
1 Tablespoon Maple Syrup
¼ cups Whole Milk (more If Needed)

Whisk all ingredients together until smooth, adding more milk as needed.
