Herb Crusted Broiled Tomatoes

Went searching the grocery store for some nice heirloom tomatoes to make a tomato sandwich, but no luck.  All I could find were some on the vine regular tomatoes.   They looked beautiful, but were rather firm.    Turned out so chilly here last night that I thought a stuffed tomato would hit the spot.    This recipe is from Cooking Light Fresh Food Fast, and it certainly lived up to the fast part!    I took thin slices off the bottom of the tomatoes to stabilize them.   I think next time I'd slice them into nice rounds and then just sprinkle the topping over everything.      Depending on the firmness of the next tomatoes, I may also bake them for a few mins to soften them up before putting them under the broiler.   Overall I was thrilled with this recipe, the buttery flavorful panko (love panko!) and the yummy tomato.     Great meal on days when you don't want anything too involved or to heat up the house a ton.




 Herb Crusted Broiled Tomatoes

 Amount  Measure       Ingredient -- Preparation Method

     1/4           cup  whole wheat panko (Japanese breadcrumbs)-- I used regular panko
  2        tablespoons  grated Parmesan cheese
  1           teaspoon  dried Italian seasoning - Used Penzey's Italian Herb Mix
     1/2      teaspoon  black pepper
     1/4      teaspoon  seasoned salt- Used Penzey's Seasoned Salt
  1           teaspoon  unsalted butter -- melted
  2                     tomatoes -- cut in half horizontally
                        Cooking spray

1. Preheat broiler.
2. Combine first 5 ingredients in a small bowl. Stir butter into breadcrumb mixture. Place tomato halves on a rimmed baking sheet coated with cooking spray. Sprinkle breadcrumb mixture evenly over tomato halves. Broil 3 to 4 minutes or until topping is golden. Serve immediately.

Yield:  4 servings (serving size: 1 tomato half)
