Lemon Thyme Chicken

This has been one of the rainiest Junes that I can remember.   And hot and muggy.    I pulled chicken breasts from the freezer yesterday morning with no real idea in mind of what to do with them for dinner.   It was a crazy day weather-wise, with it pouring one minute, sun blinding you the next.     When it came time to make dinner the skies had cleared a bit, so I wanted something that I could throw together fast and cook outside and not heat the house up more.     This one comes from the Homemade by Holman blog    :)

I put the marinade together and let the chicken sit while I trimmed up some sugar snap peas, boiled water and preheated the grill, maybe 30 mins.    I didn't reserve any of the lemon juice, just put it all in, along with the zest from both lemons.     I used Penzey's dried thyme instead of fresh.   

This was outstanding.   Juicy, lemony, simple to throw together!   It got 6 thumbs up and will be a definite go-to recipe around here    :)

Lemon Thyme Chicken

1.5-2 pounds skinless boneless chicken breasts
2 lemons
1 T olive oil
8 -10 sprigs of thyme (used Penzey's dried)
Salt and Pepper
Trim and pound chicken breasts to even thickness.   Combine lemon juice, zest, olive oil, thyme, salt and pepper in a resealable bag, add chicken.    Marinate for 30 mins.    Grill over medium heat, about 5 mins per side, until the juices run clear.
