Bacon Cheddar and Chive Scones

(originally made 6/2011)

A while back Tim saw a company on Food Network that made bacon and cheddar biscuits.    I went to the site, thinking it would make a nice gift for his bday or Father's day, and didn't like the price.    I searched Foodgawker and have been collecting recipes to try and decided on this one yesterday.   It's from the Lemon Drop blog.

I omitted the chives and black pepper (next time I'll add a little maybe 1/4t).   I used 2c of cheese instead of 1 1/2.   I didn't always remember to redip the cutter into the flour, so it dragged on a few and made the biscuits a little more squat, so don't skip that step!    These were simple, delicious and we all loved them.

FOLD the dough in 1/2 one more time and pat down to 1/2" thickness
WITH FLOURED BISCUIT CUTTER OR DRINKING GLASS, cut out scones
PLACE on cookie sheet
COMBINE egg and cream in a bowl whisking til combined
WITH PASTRY BRUSH, brush egg mixture onto tops of scones. If you like, feel free to sprinkle a bit of sea salt on the tops before baking
WITH BACK OF A TEASPOON, press a small indent into the center of each scone
