BLT Bites

Had the inlaws here to watch the game last night.  I made some old family favorites (Herbed Beef Stew, Baked Ziti) and was looking for something for finger food.   These were good.  I shortcutted and bought Real Bacon bits (said 50% reduced fat on the bag).   I didn't get as many tomatoes out of the recipe, mine were gigantic though they were marked cherry.   Will definitely make this recipe again, but will take the time to make my own turkey bacon because the bits were a little salty.

                                BLT Bites

  Amount  Measure       Ingredient -- Preparation Method
--------  ------------  --------------------------------
  28                    cherry tomatoes
  7                     bacon strips -- cooked and crumbled (used 50% red fat bacon bits)
     1/2           cup  fat-free mayonnaise -- (used light sour cream)
     1/3           cup  chopped green onions -- (used chives)
  3        tablespoons  grated Parmesan cheese
  2        tablespoons  finely chopped celery
  2        tablespoons  minced fresh parsley -- (used dried)
Cut a thin slice off the top of each tomato. Scoop out and discard pulp; invert tomatoes onto paper towels to drain. In a small bowl, combine the bacon, mayonnaise, onions, cheese, celery and parsley. Spoon into tomatoes. Cover and refrigerate for at least 2 hours.
  

NOTES : Nutrition Facts: 2 stuffed tomatoes equals 38 calories, 2 g fat (1 g saturated fat), 4 mg cholesterol, 144 mg sodium, 3 g carbohydrate, 1 g fiber, 2 g protein.
