Buttermilk pancakes

We do a breakfast for lunch about once a week and I'd forgotten to pick up the premade pancake mix this trip to the store.    I've had this one in my files for a while, and it's from Cooking Light.      

Super easy, great flavor, I did add a teeny bit of vanilla, and half I did with blueberries, and the other half with mini choc chips.    Batter was nice and thick, I used a small cookie scoop to portion it out and make nice round pancakes.     :)

                           Buttermilk Pancakes

  Amount  Measure       Ingredient -- Preparation Method
--------  ------------  --------------------------------
  1                  c  flour
  2                  T  sugar
  1                  t  baking powder
     1/2             t  baking soda
  1                  c  low fat buttermilk (used fat free)
  1                  T  vegetable oil  (used canola)
  1              large  egg -- lightly beaten
                        Maple syrup -- optional (1 point per 1T)

Combine flour, sugar, bp, and bs in a large bowl. Stir with a whisk. Combine buttermilk, oil, and egg; add to flour mixture, stirring until batter is smooth.
Spoon about 1/4c batter per pancake onto hot nonstick griddle or skillet. Turn pancakes when tops are covered with bubbles and edges look cooked. Serve with maple syrup if desired. Yield 9 pancakes (1 pancake per serving)
