Caribbean Chicken

My DH loves marinated chicken from our local butcher (6.99 a pound). I made this for lunch today, and he asked if I bought it from them :) Definitely a keeper!



Caribbean Chicken

Amount Measure Ingredient -- Preparation Method

1/2 c lemon juice
1/3 c honey
3 T canola oil
6 green onions -- sliced
3 jalapeno peppers -- seeded and chopped
3 t dried thyme
3/4 t salt
1/4 t ground allspice
1/4 t ground nutmeg
6 boneless -- skinless chicken breast halves (1 1/2lbs)

Place the first nine ingredients in a blender or food processor; cover and process until smooth. Pour 1/2c into a small bowl for basting. Pour remaining marinade into a large Ziploc bag, add chicken. Seal bag and turn to coat, refrigerate for up to 6 hours. Drain and discard marinade. Coat grill rack with nonstick spray before heating. Grill chicken, covered, over med heat for 4 to 6 minutes on each side or until juices run clear. Baste frequently with reserved marinade. Yield: 6 servings.

NOTES : Nutritional Analysis: One serving (1 chicken breast half) equals 205 calories, 6 g fat (1 g saturated fat), 66 mg cholesterol, 272 mg sodium, 11 g carbohydrate, trace fiber, 27 g protein.
