Cinnamon Elephant Ears

My SIL loves these... 


Cinnamon Elephant Ears

1 puff pastry sheet
1/2 cup sugar
1 tablespoon cinnamon

Line baking sheets with parchment paper. Sprinkle 1/4c sugar over work surface. Roll out pastry to 1/8" thick on sugar. Trim to 12x10. Combine remaining 1/4c sugar and cinnamon. Sprinkle 2T over pastry. Fold short ends in so they almost touch in center. Lightly press with rolling pin and sprinkle with 1T sugar. Fold ends in again so they almost meet, sprinkle with remaining sugar and fold in half as if closing a book. Wrap and freeze 15 to 20 mins. Heat oven to 400. Cut into 3/8" slices. Bake 10 mins, turn cookies over, until crisp and carmelized, 3 to 5 mins. Transfer to wire racks to cool completely.
