had this recipe kicking around for a while, had taken out some WW
cookbooks from the library and found some great looking stuff.
This would also be great with chicken added, and the heat is easily dialed up or down with the crushed red pepper flakes.
Fusilli with Broccoli and Peppers
2t olive oil
1/2c finely chopped red bell pepper
2 large garlic clove, minced
1/2t crushed red pepper flakes
2c broccoli florets (or one 10oz pkg frozen chopped broccoli, thawed)-- I used fresh)
1/4c low-sodium chicken broth
3c cooked fusilli pasta, hot (I used gemelli)
2T freshly grated parmesan cheese
large nonstick skillet over medium heat 30 seconds. Add oil. Heat 30
seconds more. Add bell pepper, cook, stirring occasionally, until tender
(about 3 mins). Add garlic and pepper flakes; cook, stirring until
garlic is pale gold, about 1 minute. Add broccoli and broth; bring to a
boil over medium-high heat. Cook, stirring, 1 minute. Add pasta; cook,
tossing 1 minute, or until heated through. Sprinkle evenly with cheese.
Makes 4 (1 1/4c) servings, 4 points per serving.
