Herb Roasted Chicken and Potatoes

(originally made in 2004)

I've made this one, and it is GOOOD! I use all bone in chicken breasts though, about 2 1/2lbs worth. I use a probe thermometer to make sure the chicken is cooked all the way through, so I don't have to cut one open and ruin how pretty they cook up!

Herb Roasted Chicken and Potatoes

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 whole chicken breasts -- bone in
4 medium potatoes -- in eighths
3 cloves garlic
1 tablespoon olive oil
1 tablespoon thyme
1 tablespoon oregano
2 teaspoons rosemary
1 teaspoon salt and pepper

Place chicken in large shallow roasting pan. Place potatoes in large bowl. Combine garlic, olive oil, zest, oregano, thyme, rosemary, salt and pepper. Brush 1/2 over chicken, toss other 1/2 over potatoes. Arrange potatoes in serving pan around chicken. Bake for 45 mins or until potatoes are fork tender and chicken is no longer pink.
