Italian Sausage Lasagna

(originally made in 2002, family favorite)

Italian Sausage Lasagna

1 pound italian sausage
1/2 cup onion -- chopped
1 clove garlic
2 tablespoons parsley
1 teaspoon sugar
1 teaspoon basil
1/2 teaspoon salt
16 ounces whole tomatoes
15 ounces tomato sauce
12 ounces lasagna noodles -- uncooked
16 ounces ricotta cheese
1/4 cup parmesan cheese
1 tablespoon parsley
1 1/2 teaspoons oregano
2 cups mozzarella cheese
1/4 cup parmesan cheese

Cook and stir sausage, onion and garlic until brown, drain. Stir in 2T parsley, sugar, basil, 1/2t salt, tomatoes, sauce; break up tomatoes. Heat to boiling, reduce heat. Simmer 45 mins. Cook noodles according to package directions, drain. Mix ricotta, 1/4c parmesan, 1T parsley and oregano. Spread 1c sauce in 13x9, top with 4 noodles. Spread 1c cheese mixture. Spread 1c sauce mixture. Sprinkle with 3/4c mozzarella. Repeat with 4 noodles, remaining cheese mixture, 1c sauce, and 2/3c mozzarella. Top with remaining noodles, sauce mixture, mozzarella and parmesan. Bake uncovered at 350 for 35 mins, let stand 15 mins before serving.
