Lemon Garlic Potato Packet Simple & YUMMY!

Needed a side dish to serve with Grilled Dixie Chicken. A friend sent me this wonderful cookbook from Good Housekeeping, it's called GRILL IT! I've got so many post it flags marking recipes to try, it looks like a rainbow :)

This is what I settled on, easy and good and the timing was perfect with the chicken. I forgot the garlic at home, so I substituted a teaspoon of garlic salt and omitted the 1t salt called for in the recipe.

Lemon Garlic Potato Packet

2 1/2lbs red potatoes, not peeled, in 1" chunks
12 garlic cloves, peeled (omitted, subbed 1t garlic salt)
2T olive oil
1 1/2t fresh grated lemon peel (I used Penzey's dried)
1t salt (omitted)
1/4t coarsely ground black pepper

Prepare outdoor grill for covered direct grilling over medium heat. In large bowl, toss potatoes, garlic, lemon peel, oil, salt and pepper until evenly coated. Layer 2 30"x18" sheets of heavy duty foil to make a double thick sheet. Place potatoes on middle of foil. Bring short ends up and fold over to seal. Bring up other way and do the same, sealing in juices.

Place packet on hot grill over medium heat and cook, turning once halfway through the grilling time, until potatoes are fork tender, about 30 mins. Makes 8 side servings.
