Quick Pepperoni Pizza Snacks

Jake loves pizza.   The problem is, when Jake wants pizza, he wants it NOW, not waiting-90 mins-for-dough, plus assembly time, plus baking time.   As a result, I've made pizza just about any way you can think of- english muffins, pitas, tortillas, inside wonton wrappers, etc.   I saw this idea on Foodgawker, from the MissintheKitchen blog and filed it away.   Biscuits were buy one get one this week, so grabbed some to have on hand the next time Jake asked for pizza  :)

This was fun for him to help with, we did add sauce to ours, and I used Penzey's Italian Herb Mix and some crushed red pepper flakes on mine.    I bought the mini pepperoni because it was on sale, but you could definitely cut a regular slice into quarters instead.    I also put mine under the broiler for the last few seconds to make the cheese bubble and brown.

 Quick Pepperoni Pizza Snacks

  1                can  refrigerated biscuits (I used Grands)
  1                cup  mozzarella cheese -- shredded (I used part skim)
  1         tablespoon  dried oregano- (I used Penzey's Italian Herb Mix)
  2                 oz  mini pepperoni slices

Pre-heat oven to 375 degrees.  On a clean surface, use a rolling pin to flatten each biscuit dough into about a 4 inch circle.  Place on a greased or lined baking sheet.  Sprinkle each crust with about 2 tablespoons mozzarella, a little oregano and a few pepperoni slices.  Bake for 10-12 minutes or until crust is fully cooked and lightly browned around the edges.
