Mama Mia Meatball Taquitos- Taste of Home Tuesday

I can't believe it's Taste of Home Tuesday again already!   Things have been crazy here- we've bought a house and the moving frenzy has begun.   I've got about half the kitchen packed, which has made meal planning and cooking a fun challenge.   I've been relying heavily on old standbys and new dishes from the Simple & Delicious cookbook.

That's where I found this easy recipe.   I always make too many meatballs for spaghetti night, and I freeze them right in the sauce for quick subs, etc.   I let it defrost, removed the meatballs from the sauce and then continued with the recipe. 

I used part skim ricotta because it's what I had on hand.     I warmed the sauce in small ramekins for dipping.   These were a big hit here, even with my son who isn't a huge meatball fan.    They'll make great game day snacks too.    Thanks to Lauren W for sharing the recipe!

                        Mama Mia Meatball Taquitos


  12                    frozen fully cooked Italian meatballs -- thawed
  2               cups  shredded part-skim mozzarella cheese -- (8 ounces)
  1                cup  whole-milk ricotta cheese- used part skim
  1           teaspoon  Italian seasoning
  12                    flour tortillas (8 inches)
                        Cooking spray
                        Warm marinara sauce, additional Italian seasoning

Preheat oven to 425°. Place meatballs in a food processor; pulse until finely chopped. Transfer to a large bowl; stir in cheeses and Italian seasoning.

Spread about 1/4 cup meatball mixture down center of each tortilla. Roll up tightly. Place on a greased 15x10x1-in. baking pan, seam side down; spritz with cooking spray.

Bake 16-20 minutes or until golden brown. Serve with marinara sauce. Yield: 6 servings.

  4. I love when I find a new twist on an old classic. This really mixes up the traditional meatball sub. They look delicious!

Since I already came up with a version of Dunkin Donuts new Egg White & Veggie Omelet Bites for myself, I decided to make the other variety that they are offering, Bacon & Cheddar, for my husband. Super simple.  Beat up some eggs with salt and pepper.  Add in some shredded cheddar and a slice of bacon cut into 1/4" pieces (I used kitchen shears).  Bake them for about 9 minutes in sprayed mini donut pans. They baked up light and fluffy.  The bacon stayed crisp and there's just the perfect amount of cheese.   I split them up into portions in zip top bags and that way we can just grab a bag and warm them up. Copycat Dunkin Donuts Egg White & Veggie Omelet Bites

I'm a huge fan of the Dunkin Donuts Power Breakfast sandwich, so when I started seeing ads for the new Egg White & Veggie Omelet Bites I stopped in and gave them a try.  They were delicious, but of course, I knew I could make them at home.  I started with the whites of six eggs. You can use pasturized whites if you don't want to do the whole separating, finding a use for the yolks thing.  I beat them up with some salt and pepper. Next up, the tomato and spinach.  I used grape tomatoes, seeded them and then chopped them into 1/4" pieces. I like baby spinach, and I took about 10 leaves and chopped those up into 1/4" pieces as well. I added that to the egg mixture.  When you pour it into the pans, be sure that it all gets evenly distributed.   They bake up pretty quickly, around 9 minutes or so.  Dunkin gives you two egg bites, the mini donut serving size is three. Speedy Shepherd's Pie- Taste of Home 100 Family Meals cookbook

How often does your family eat meals together?  My husband worked second shift for over a decade, and it was a rare occasion for us all to sit down at the same time and eat.    Once he went to a better schedule, mealtime moved back to the table.   This past fall, we bought a house, and in the chaos of moving, we drifted away again.    Son likes to eat in front of the computer or phone, husband in front of the tv.   I'm guilty too, sometimes the jigsaw puzzle I'm working on can render the dining room table unusable for days. Looking for inspiration, I turned to Taste of Home's 100 Family Meals .  As you can see by the number of pages I marked, there's lots to be found! There are suggestions for entire meals, complete with a list of groceries you need.    It's well categorized for easy mixing and matching too.       The first recipe I chose was Speedy Shepherd's Pie.    It's a fun twist on the traditional version, using taco seasoned meat as the base.
