Top 10 Breakfasts of 2018!

The end of the year is a great time to reflect on all the fantastic things you've made.  Today I'm sharing my top 10 breakfast recipes of 2018.  I really tried to branch out and explore new things this year, and breakfast has always been a particular challenge, but I think I did well overall!

It took me a while, but I finally jumped on the overnight oats wagon!  It was my go to breakfast for most of the summer.  There are just so many ways to switch it up, but these Apple Cinnamon Overnight Oats were the ones I made most often.



These Zucchini Carrot Muffins made great on the go breakfasts!  They froze and reheated very well. And if you peel the zucchini, fussy eaters will never know it's there.


You can't have a breakfast round up without including pancakes! These Yogurt Pancakes. were so fluffy and light.  They're great with the addition of fruit, chocolate chips or just as is.


This year I moved some of my family's blueberry bushes to our house, and they were put to great use in these Baked Blueberry Ginger Pancakes.


I'd have never thought to add ricotta to pancakes, but I'm sure glad that I did! Orange Ricotta Pancakes


After discovering my cabinets were overloaed with oats, I made a batch of these Brown Sugar Muffins.  They were gone in a flash.  I make them about twice a month now, my son loves to eat them on the way to school.


I love recipes that are versatile. I've made these Strawberry Oatmeal Bars several times, but I change up the flavors of the jam.  I've done blackberry, blueberry, even made some with some fig preservers I got from the farmer's market!


Would you believe that I'd never eaten eggs in a breakfast form up until 2018?  Now I absolutely love them!  This Calico Pepper Frittata was the first recipe I tried, and is still one of the ones I make most often.


Another new thing I tried this year was baking oatmeal.  I really loved making a big batch on Sunday and just being able to grab a square out of the fridge to heat up.  Maple Apple Baked Oatmeal


Now, some might argue that this Blueberry Sour Cream Coffee Cake isn't really breakfast, but I think that if it goes well with coffee, it qualifies!


I'm going to award these Black Bottom Banana Bars an honorable mention, because any time you can incorporate chocolate into breakfast, I consider that a win :)

Copycat Dunkin Donuts Egg White & Veggie Omelet Bites

I'm a huge fan of the Dunkin Donuts Power Breakfast sandwich, so when I started seeing ads for the new Egg White & Veggie Omelet Bites I stopped in and gave them a try.  They were delicious, but of course, I knew I could make them at home.  I started with the whites of six eggs. You can use pasturized whites if you don't want to do the whole separating, finding a use for the yolks thing.  I beat them up with some salt and pepper. Next up, the tomato and spinach.  I used grape tomatoes, seeded them and then chopped them into 1/4" pieces. I like baby spinach, and I took about 10 leaves and chopped those up into 1/4" pieces as well. I added that to the egg mixture.  When you pour it into the pans, be sure that it all gets evenly distributed.   They bake up pretty quickly, around 9 minutes or so.  Dunkin gives you two egg bites, the mini donut serving size is three. Copycat Dunkin Donuts Bacon and Cheddar Omelet Bites

Since I already came up with a version of Dunkin Donuts new Egg White & Veggie Omelet Bites for myself, I decided to make the other variety that they are offering, Bacon & Cheddar, for my husband. Super simple.  Beat up some eggs with salt and pepper.  Add in some shredded cheddar and a slice of bacon cut into 1/4" pieces (I used kitchen shears).  Bake them for about 9 minutes in sprayed mini donut pans. They baked up light and fluffy.  The bacon stayed crisp and there's just the perfect amount of cheese.   I split them up into portions in zip top bags and that way we can just grab a bag and warm them up. Double Layer Pineapple Upside Down Cake

Back in the day I used to bake from home for extra money.  This was one of the most popular items.  Cake mix sizes have changed and I've gone from using a 9" cake pans to 8" ones.  You can also use this cake mix upsizer to make up the difference between the old and new cake mix sizes.  If the layers are too thin, you'll never be able to flip and stack them without a mess.
