Dutch Apple Pie Muffins

Hard to believe that August is coming to an end but that means apple season is just around the corner! For this month's Muffin Monday I made Suzanne P's Dutch Apple Pie Muffins from Taste of Home.

BLT Waffle Sliders

    We are big fans of waffles so I jumped at the chance to join some of my fellow blogger friends to celebrate #NationalWaffleDay today!  Since I've made a ton of sweet waffles, I went searching for a savory option and found Stacey J's BLT Waffle Sliders on the Taste of Home site.    I'm going to be honest, the recipe calls for separating the eggs and beating them to stiff peaks and I did not.  I know that this may result in a slightly more dense waffle, but since it's for a sandwich I'm totally okay with that.     I used a cookie scoop to make sure they were all the same size. I split the batch evenly and did half of them as slider size and half as full size waffles.  I think those would be great topped with chili, so I'm going to freeze some of them for when the weather is cooler.   This would make a great brunch item because you can lay everything out and people can assemble their own based on their likes and dislikes. August 8th is National Sneak Zucchini onto Your Neighbors Porch Day!   It's a lot harder nowadays with camera doorbells and such to do that, so why not find some great recipes to use it up instead? Heirloom Tomato and Fresh Mozzarella Caprese Sandwich

Beautiful heirloom tomatoes, fresh mozzarella cheese, locally made bread, and basil combine into summer's best sandwich!     I'm closing out #FarmersMarketWeek with one of my favorite summer meals, Heirloom Tomato and Fresh Mozzarella Caprese Sandwich.  I went to the farm specifically for this recipe, and I was happy to find some nice freshly baked Italian bread. I grabbed some pre-sliced fresh mozzarella which made the prep on this even easier.  It took about 4 1/2 slices to cover the bread.  I sprinkled it with some chopped fresh basil. I brought home 3 different kinds of heirloom tomatoes, they were all so pretty I almost didn't want to cut them up!  This one was huge, so two slices was plenty to cover the cheese.  Give them a sprinkle of kosher salt and some fresh cracked black pepper. Top each sandwich with another slice of bread and brush it with olive oil. Heat a griddle to medium and melt some butter on it. Place the sandwich on the griddle with the tomato side down

Honeyed Carrots with Citrus Basil Gremolata

My last farm trip I picked up a beautiful bunch of rainbow carrots.  I wanted a recipe that had a sweet base that I knew my guys would eat, but had a little something "extra" for me. I found these Honeyed Carrots with Citrus Basil Gremolata by Naylet L. on the Taste of Home website. Make sure you slice the carrots all about the same size so that they cook evenly.  I loved that this is done in the microwave and all comes together in about 15 minutes. I left the red pepper flakes out of the gremolata hoping that they might give it a try but they were happy with just the glazed carrots.  I ended up adding the pepper flakes to my portion later. That meant I had extra gremolata, and it was fantastic the next day in a wrap with some grilled chicken.
