Triple Citrus Ginger Scones

For my second Spring Sweets Week recipe I whipped up some scones.  They are super simple to make and really pop when you load them full of freshly squeezed citrus juice and ginger!

 I knew I wanted to make scones but couldn't decide on one flavor of citrus so I went with all three! Using a microplane is my favorite way to zest whether it's a lot or a little. Fast and then I pop it right on the top rack of the dishwasher.

Selefina Spices also sent some fantastic items.  I knew right away I wanted to put the cinnamon in these.  After snacking on a few pieces of the crystallized ginger I thought that would be great in them too.

The key to scones is to not overwork the dough.  They stay much more tender that way.  I like to knead it by hand 6 or 8 times on top of a pastry mat.  That also helps me form it into a proper circle shape that's the size I want.

Once you've got your circle then you cut it into 8 wedges.

Spread the wedges out on a baking sheet. Brush them with butter and sprinkle them with sugar.

After the scones are baked, let them cool and then glaze them. You can do a thick glaze and drizzle it on in stripes or a thinner glaze that coats the whole top.  I went with the thinner version for these.

It ensures that you get a little bit of glaze in every bite but it's not a super sweet mouthful.

Triple Citrus Ginger Scones

Ingredients

  • 2-1/4 cups all-purpose flour
  • 1/4 cup plus 1 tablespoon sugar, divided
  • 4 teaspoons grated Cara Cara Orange zest
  • 2 teaspoons grated Seedless Lemon zest
  • 1-1/2 teaspoons grated Key Lime zest
  • 3 teaspoons baking powder
  • 1/2 teaspoon Selefina Cinnamon
  • 1/2 teaspoon salt
  • 6 tablespoons cold butter, cubed
  • 1 large egg, room temperature
  • 1/4 cup Cara Cara Orange juice
  • 1/4 cup buttermilk
  • 2 tablespoons Selefina crystallized ginger root, chopped
  • 1 tablespoon butter, melted
Glaze
  • 1/4 cup confectioners' sugar
  • 1/2 teaspoon grated Seedless Lemon zest
  • 1/2 teaspoon grated Key Lime zest
  • 1/2 teaspoon grated Cara Cara Orange zest
  • 1 1/2 teaspoon Key Lime juice
  • 1 1/2 teaspoon Seedless lemon juice
  • 1 tablespoon Cara Cara Orange juice

Instructions

  1. Preheat oven to 400°. Place flour, 1/4 cup sugar, citrus zests, baking powder, cinnamon and salt in a food processor; pulse until blended. Add cold butter; pulse until butter is the size of peas. Transfer to a large bowl. In a small bowl, whisk egg, orange juice and buttermilk until blended; stir into crumb mixture just until moistened.
  2. Turn onto a lightly floured surface; sprinkle with chopped crystallized ginger root, knead gently 6-8 times. Pat dough into a 6-in. circle. Cut into 8 wedges. Place wedges on a parchment-lined baking sheet. Brush with melted butter; sprinkle with remaining sugar.
  3. Bake 14-18 minutes or until golden brown. Meanwhile, in a small bowl, mix glaze ingredients until smooth. Remove scones from oven; immediately brush with glaze. Serve warm.

    Copycat Dunkin Donuts Egg White & Veggie Omelet Bites

    I'm a huge fan of the Dunkin Donuts Power Breakfast sandwich, so when I started seeing ads for the new Egg White & Veggie Omelet Bites I stopped in and gave them a try.  They were delicious, but of course, I knew I could make them at home.  I started with the whites of six eggs. You can use pasturized whites if you don't want to do the whole separating, finding a use for the yolks thing.  I beat them up with some salt and pepper. Next up, the tomato and spinach.  I used grape tomatoes, seeded them and then chopped them into 1/4" pieces. I like baby spinach, and I took about 10 leaves and chopped those up into 1/4" pieces as well. I added that to the egg mixture.  When you pour it into the pans, be sure that it all gets evenly distributed.   They bake up pretty quickly, around 9 minutes or so.  Dunkin gives you two egg bites, the mini donut serving size is three. I pop them in ziplocs in the fridge and just pull a bag and reheat them in the microwave for a quick

    Copycat Dunkin Donuts Bacon and Cheddar Omelet Bites

    Since I already came up with a version of Dunkin Donuts new Egg White & Veggie Omelet Bites for myself, I decided to make the other variety that they are offering, Bacon & Cheddar, for my husband. Super simple.  Beat up some eggs with salt and pepper.  Add in some shredded cheddar and a slice of bacon cut into 1/4" pieces (I used kitchen shears).  Bake them for about 9 minutes in sprayed mini donut pans. They baked up light and fluffy.  The bacon stayed crisp and there's just the perfect amount of cheese.   I split them up into portions in zip top bags and that way we can just grab a bag and warm them up. My husband laughed when I told him 3 is the serving size.  I'll definitely be doubling the recipe next time!     Double Layer Pineapple Upside Down Cake

    Back in the day I used to bake from home for extra money.  This was one of the most popular items.  Cake mix sizes have changed and if you're using the 15.75 ounce ones bake them in 8" pans. If you want to use the 9" rounds, you can also use this cake mix upsizer to make up the difference between the old and new cake mix sizes.  If the layers are too thin, you'll never be able to flip and stack them without a mess.
