    Irish Soda Bread Muffins


    I talk a lot about my Italian ancestry and the food that surrounds it, but I also have Irish in there from my Mom's side.   We didn't eat any Irish food growing up that I can recall, so I went on a recipe search.  Irish soda bread kept catching my eye. 

    Even though I've mostly worked through my fear of yeast, I loved that baking soda is used as a leavening agent instead.   I found these on the Taste of Home site, and since muffins are always a huge hit here, I put the ingredients on the shopping list.

    Unfortunately, I couldn't find the currants, I substituted dried cranberries instead. I sprinkled the tops with raw sugar instead of regular, I just love the crunch it gives.  I was hesitant about the caraway.  I've had resistance in the past from my guys when I've made things with anise,  which is a similar flavor profile. These were a huge hit with everyone.   The caraway isn't overwhelming, and I love the texture of the muffins.

    Irish Soda Bread Muffins

    Irish Soda Bread Muffins
    Yield: 1 dozen

    Ingredients

    • 2 1/4 cups flour
    • 1/2 cup sugar
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1/4 teaspoon baking soda
    • 1 teaspoon caraway seeds
    • 1 cup buttermilk
    • 1/4 cup butter, melted
    • 1/4 cup canola oil
    • 3/4 cup dried currants, raisins or dried cranberries
    • Raw (turbinado) sugar for sprinkling on top before baking

    Instructions

    1. In a large bowl, combine the flour, sugar, baking powder, salt, baking soda and caraway seeds. In another bowl, beat the egg, buttermilk, butter, and oil.
    2. Stir into dry ingredients just until moistened. Fold in currants. Fill greased muffin cups three-fourths full. Sprinkle with raw sugar.
    3. Bake at 400° for 15 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pan to wire rack. Serve warm.

    1. Until recently, I too have a hard time finding dried currants. Luckily for me, they seem to be popping up everywhere now! Guess that means it's time to make some soda bread muffins!!!

    2. I love these little muffins. I was able to find currants but it was a HUGE package. I have enough currants to last me 5 years LOL. I think the dried cranberries were a great substitution.
