    Cherry Chocolate Chip Waffles with Cherry Syrup

     

    C is for cherries and chocolate chips!

    This year I'm participating in a bi weekly challenge with some blogging friends to post recipes using all of the letters in the alphabet.  It can feature a food that begins with the letter of the week or the recipe name can contain the week's letter.   


    This week I've chose Cherry Chocolate Chip Waffles with Cherry Syrup from Taste of Home. I only made one small change to the recipe and that was to substitute vanilla extract for the almond extract due to nut allergies in my family.


    The syrup comes together quickly and I'm wishing I had doubled the recipe because it would be great on ice cream too. I did use frozen cherries that I thawed and that made the syrup take a bit longer to cook down to a thickened state, getting that extra moisture out.


    This time around I used my square waffle maker that does 4 at a time and I got 10 waffles. I froze some and reheated them in the toaster the next day and that worked great. I'm anxious to see how they'll turn out in the Presto Flipside, which makes a nice thick round Belgian style waffle.

    Cherry Chocolate Chip Waffles with Cherry Syrup

    Cherry Chocolate Chip Waffles with Cherry Syrup

    Ingredients

    Syrup
    • 1/2 cup sugar
    • 1/2 cup plus 2 tablespoons water, divided
    • 1/2 cup fresh or frozen pitted dark sweet cherries, thawed and finely chopped
    • 1 tablespoon cornstarch
    Waffles
    • 1-1/4 cups all-purpose flour
    • 1 teaspoon baking powder
    • 1 teaspoon ground cinnamon
    • 1 teaspoon baking soda
    • 1-1/2 cups buttermilk
    • 2 large eggs, room temperature
    • 1/3 cup canola oil
    • 1/2 teaspoon vanilla extract
    • 1-1/2 cups fresh or frozen pitted dark sweet cherries, thawed and chopped
    • 1/2 cup miniature semisweet chocolate chips
    • Additional miniature semisweet chocolate chips, optional

    Instructions

    For the syrup
    1. In a small saucepan, cook and stir sugar and 1/2 cup water over medium heat until sugar is dissolved. Add cherries; cook and stir until cherries are tender, 3-5 minutes. 
    2. Mix cornstarch and remaining 2 tablespoons water until smooth; stir into pan. Bring to a boil; cook and stir until thickened, 1-2 minutes. Remove and keep warm.
    For the waffles
    1. Preheat waffle maker. In a large bowl, whisk flour, baking powder, cinnamon and baking soda.
    2.  In another bowl, whisk buttermilk, eggs, oil and extract until blended. Add to dry ingredients; stir just until moistened. Stir in cherries and chocolate chips. 
    3. Bake waffles according to manufacturer’s directions until golden brown. 
    Serve with cherry syrup and, if desired, additional chocolate chips.

    4. Cherries and chocolate.. perfect combination. The waffles look so tempting, wish I could have them right away. Don't have a waffle machine, but love the idea to make pancakes instead.

    5. This recipe reminds me that we haven't had waffles in FOREVER! And with all the trashed up yummies in these, I think they need to be on our breakfast menu SOON!!!
