Cinnamon Raisin Apple Grilled Cheese

Happy National Grilled Cheese Day! I actually didn't eat many grilled cheese growing up but now I'm  a huge fan.  My guys like the classic, American cheese on white bread but I'm much more adventurous.  When I saw this Cinnamon Raisin Apple Grilled Cheese on Taste of Home I knew I had to give it a try!

I did make a few changes to the recipe, and the first was to leave the peel on the apple. I used a Granny Smith and cut it in 1/4" slices.

 

I used chopped pecans instead of walnuts, I like the Millican brand.  I switched out the regular honey for Mike's hot honey to give it a little kick.  

 

I'm not normally a raisin person but I do enjoy the cinnamon raisin swirl bread.  If you aren't a fan, they do make versions without the raisins. 

I omitted the powdered sugar called for and just combined together cream cheese and some Selefina Cinnamon.  

You stir the toasted honeyed pecans into the cream cheese mixture and then spread it onto two slices of bread. (You know, I always have the best intentions of doing a step by step picture tutorial, but I kind of lost that right about here.)

Next you add a slice of cheese to each stack.  This was my first time ever having Muenster cheese, it won't be the last!  After that it's the sliced apples, another slice of cheese and then top it with another slice of bread.  

Butter the top slices of bread and invert the sandwiches onto a preheated skillet, then butter the bottom slices. Cook until golden brown on both sides and the cheese is melted. 

Just look at all that ooey, gooey melted cheese! I love the crunch from the apples and pecans and the little kick from the hot honey.  I'm thinking that this would also make a great stuffed french toast!

Cinnamon Raisin Apple Grilled Cheese

Cinnamon Apple Grilled Cheese

Ingredients

  • 1 cup sliced tart apple, peel if desired
  • 3 teaspoons butter, softened, divided
  • 1/3 cup chopped pecans
  • 1 tablespoon hot honey
  • 3 tablespoons cream cheese, softened
  • 1/4 teaspoon ground cinnamon
  • 4 slices cinnamon raisin bread
  • 4 slices Muenster cheese

Instructions

  1. In a large skillet, saute apple slices in 1 teaspoon butter until tender. Meanwhile, in a small skillet, cook and stir the pecans and honey over medium heat for 2-3 minutes or until lightly toasted.
  2. In a small bowl, beat the cream cheese and cinnamon until smooth. Stir in pecan mixture. Spread over 2 slices of bread; layer with Muenster cheese, apple slices and remaining bread. Spread remaining butter over the outsides of each sandwich.
  3. In a large skillet coated with cooking spray, toast sandwiches for 1-2 minutes on each side or until golden brown and cheese is melted.

    I have made apple grilled cheese but wasn't creative enough to add nuts and cinnamon raisin bread. Can't wait to try this version.

    I am loving this delicious idea! I love everything about this grilled cheese and using a cinnamon raisin bread to pair with apple, nuts and cheese is simple amazing. Great recipe.

    Copycat Dunkin Donuts Egg White & Veggie Omelet Bites

    I'm a huge fan of the Dunkin Donuts Power Breakfast sandwich, so when I started seeing ads for the new Egg White & Veggie Omelet Bites I stopped in and gave them a try.  They were delicious, but of course, I knew I could make them at home.  I started with the whites of six eggs. You can use pasturized whites if you don't want to do the whole separating, finding a use for the yolks thing.  I beat them up with some salt and pepper. Next up, the tomato and spinach.  I used grape tomatoes, seeded them and then chopped them into 1/4" pieces. I like baby spinach, and I took about 10 leaves and chopped those up into 1/4" pieces as well.     Copycat Dunkin Donuts Bacon and Cheddar Omelet Bites

    Since I already came up with a version of Dunkin Donuts new Egg White & Veggie Omelet Bites for myself, I decided to make the other variety that they are offering, Bacon & Cheddar, for my husband. Super simple.  Beat up some eggs with salt and pepper.  Add in some shredded cheddar and a slice of bacon cut into 1/4" pieces (I used kitchen shears).  Bake them for about 9 minutes in sprayed mini donut pans. They baked up light and fluffy.  The bacon stayed crisp and there's just the perfect amount of cheese.   I split them up into portions in zip top bags and that way we can just grab a bag and warm them up. My husband laughed when I told him 3 is the serving size.  I'll definitely be doubling the recipe next time!     Strawberry Pizzelles

    Pizzelles are one of my favorite childhood cookies and I'm constantly looking for ways to put a new spin on them.  Since one of my favorite summer fruits is strawberries, I swapped out the vanilla in the original recipe with strawberry extract.  This post is sponsored in conjunction with #SummerDessertWeek !  I received product samples from sponsor companies to aid in the creation of my recipes.
