Spiced Apple Oatmeal


A is for Apples!

This year I'm participating in a bi weekly challenge with some blogging friends to post recipes using all of the letters in the alphabet.  It can feature a food that begins with the letter of the week or the recipe name can begin with the week's letter.

 

I had Honeycrisp apples on hand and since January is National Slow Cooker Month and National Oatmeal Month I thought I'd kill 3 birds with one stone and make this Spiced Apple Oatmeal from Taste of Home. 

Take the time to grate the spices fresh, it really makes a difference! I like to use my microplane zester or spice mill.


This recipe calls for steel cut oats and it's important not to substitute because you'll end up with a big bowl of mush.  My personal favorites are the Quaker Oat or Flahavan's brands.

I used whole milk because that's what we buy and I replaced the vanilla coffee creamer with some Gingerbread Cookie Dough creamer that I had left over from the holidays.

 

Mine took 4 hours on low, be sure to watch it because newer slow cookers definitely run hotter than old models.  You can do lots of fun add-ons like pecans, dried cranberries, a drizzle of maple syrup or you can stir in some more milk.

Spiced Apple Oatmeal

Spiced Apple Oatmeal

Ingredients

  • 1/2 cup packed brown sugar
  • 2 tablespoons lemon juice
  • 2 tablespoons molasses
  • 3 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon salt
  • 4 medium apples, peeled and cut into 1-inch slices
  • 2 cups steel-cut oats
  • 2 large eggs
  • 2-1/2 cups water
  • 2 cups milk
  • 1 cup refrigerated Gingerbread Cookie Dough creamer

Instructions

  1. Mix the first 8 ingredients. Place apples in a greased 4-qt. slow cooker. Top with brown sugar mixture, then the oats.
  2. Whisk together eggs, water, milk and creamer; pour over oats. Cook, covered, on low until oats are tender, 4-1/2 to 5 hours.
  3.  If desired, serve oatmeal with pecans, dried cranberries, maple syrup and additional milk.

This sounds soooo good! I'd love to come down to a slow cooker full of this in the morning.
I'd definitey roll out of bed for this in the morning. I'll have to remember to buy some steel cut oats the next time I'm at the market!

Jolene hubby and I are more brunch people, so this spiced apple oatmeal is perfect. I've not had oatmeal with eggs added to it. Will be trying this recipe out as the eggs add the required protein.

Copycat Dunkin Donuts Egg White & Veggie Omelet Bites

I'm a huge fan of the Dunkin Donuts Power Breakfast sandwich, so when I started seeing ads for the new Egg White & Veggie Omelet Bites I stopped in and gave them a try.  They were delicious, but of course, I knew I could make them at home.  I started with the whites of six eggs. You can use pasturized whites if you don't want to do the whole separating, finding a use for the yolks thing.  I beat them up with some salt and pepper. Copycat Dunkin Donuts Bacon and Cheddar Omelet Bites

Since I already came up with a version of Dunkin Donuts new Egg White & Veggie Omelet Bites for myself, I decided to make the other variety that they are offering, Bacon & Cheddar, for my husband. Super simple.  Beat up some eggs with salt and pepper.  Add in some shredded cheddar and a slice of bacon cut into 1/4" pieces (I used kitchen shears).  Bake them for about 9 minutes in sprayed mini donut pans. They baked up light and fluffy.  The bacon stayed crisp and there's just the perfect amount of cheese.   I split them up into portions in zip top bags and that way we can just grab a bag and warm them up. My husband laughed when I told him 3 is the serving size.  I'll definitely be doubling the recipe next time! Strawberry Pizzelles

Pizzelles are one of my favorite childhood cookies and I'm constantly looking for ways to put a new spin on them.  Since one of my favorite summer fruits is strawberries, I swapped out the vanilla in the original recipe with strawberry extract.  This post is sponsored in conjunction with #SummerDessertWeek !  I received product samples from sponsor companies to aid in the creation of my recipes.
