Kiss from a Vampire Cookies #HalloweenTreatsWeek

Cookies are always a hit around here and I'm always looking for interesting ones to try. These Kiss From A Vampire cookies were on the Taste of Home website a while back and I came across the printout when I was deciding on this year's HalloweenTreatsWeek recipes so I thought I'd give them a go.

The dough itself comes together quickly and easily. The recipe calls for almond extract and I omitted it due to allergies. It says to shape the dough into a disk, wrap and chill but in the future I'd do two disks. 

 

I am a big fan of pastry mats when rolling out crusts and cookies.  You use way less flour and the cleanup goes much faster because you just roll it up and dump it over the wastebasket and then give it a quick wipe down with a damp cloth. 


You want  to make sure the dough is appropriately thin enough so that the cookies actually bake through. I have rings that slide onto my rolling pin that ensure the proper measurement. I made my circles with a biscuit cutter but you can use the rim of a glass or bottle, just be sure to dip it in flour first. 


You can re-roll the scraps but as I mentioned I'd do 2 disks next time and keep one in the fridge while I worked on the other. I used a very small cookie scoop to put the jam onto the cookie halves.  Mine is from Pampered Chef but you can also get them online.  

Place another cookie round on top and then gently press along the edges.  If you find the dough isn't sticking to itself there may be too much flour still on it and you can remove it gently with a pastry brush.

I initially thought using a decorating tip would be a great way to punch out the bite marks but it all got stuck up inside and was a pain to clean out.  A skewer or a toothpick is the way to go. 


The jam didn't ooze out of the holes which was fine because then I could go back and add it with a little bit more precision and control. If you want really bright red you could always use icing gel like I did. 

I'd make these year round, without the fang holes, of course.  They're buttery and delicious and you can change up the type of jam to whatever you like.  They'd also be great with a little sparkling sugar on top.

Kiss from a Vampire Cookies

Ingredients

  • 3/4 cup butter, softened
  • 1/2 cup sugar
  • 1 large egg, room temperature
  • 1/2 teaspoon vanilla extract
  • 1-1/2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup seedless strawberry jam
  • Additional seedless strawberry jam or red icing gel, optional

Instructions

  1. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in egg and extract. Combine flour and salt; gradually add to creamed mixture and mix well. Flatten into a disk. Wrap and refrigerate for 30 minutes.
  2. Heat oven to 325º. On a lightly floured surface, roll dough to 1/8-in. thickness. Cut with a floured 2-in. round cookie cutter.
  3. Place half of the circles on greased baking sheets. Place 1 teaspoon jam in the center of each circle; top with remaining circles and press edges lightly to seal. Use a skewer to poke 2 small holes (resembling a vampire bite) in the top of each cookie.
  4. Bake for 10-12 minutes or until cookies are set. (Jam may escape from tops of cookies as they bake.) Cool for 5 minutes before removing from pans to wire racks.
  5. If necessary, dip a skewer in additional jam and drizzle from the small holes in the cookies to emphasize vampire bite as desired.

Copycat Dunkin Donuts Egg White & Veggie Omelet Bites

I'm a huge fan of the Dunkin Donuts Power Breakfast sandwich, so when I started seeing ads for the new Egg White & Veggie Omelet Bites I stopped in and gave them a try.  They were delicious, but of course, I knew I could make them at home.  I started with the whites of six eggs. You can use pasturized whites if you don't want to do the whole separating, finding a use for the yolks thing.  I beat them up with some salt and pepper. Copycat Dunkin Donuts Bacon and Cheddar Omelet Bites

Since I already came up with a version of Dunkin Donuts new Egg White & Veggie Omelet Bites for myself, I decided to make the other variety that they are offering, Bacon & Cheddar, for my husband. Super simple.  Beat up some eggs with salt and pepper.  Add in some shredded cheddar and a slice of bacon cut into 1/4" pieces (I used kitchen shears).  Bake them for about 9 minutes in sprayed mini donut pans. They baked up light and fluffy.  The bacon stayed crisp and there's just the perfect amount of cheese.   I split them up into portions in zip top bags and that way we can just grab a bag and warm them up. My husband laughed when I told him 3 is the serving size.  I'll definitely be doubling the recipe next time! Strawberry Pizzelles

Pizzelles are one of my favorite childhood cookies and I'm constantly looking for ways to put a new spin on them.  Since one of my favorite summer fruits is strawberries, I swapped out the vanilla in the original recipe with strawberry extract.  This post is sponsored in conjunction with #SummerDessertWeek !  I received product samples from sponsor companies to aid in the creation of my recipes.
